Cimatti was a major player in the field of small and medium-sized off-road machines. The focus was on the 50 cm³ class (mopeds and small motorcycles), supplemented by competition models in the 125 cm³ class.

• Model series: The best-known series was the Cimatti Kaiman (in variants such as X18, X19, X21), which was one of the most successful off-road mopeds in Italy and France in the 1970s.
• Competition: Cimatti produced specialized racing machines for enduro sports (Regolarità), which often stood out due to their characteristic red or yellow paintwork and high-quality components.

Cimatti primarily operated as an assemblatore (designer who purchases and assembles components), which was typical of Italian industry at that time.

• Engines: The company worked almost exclusively with Minarelli. It used the P4, P6, and later the K6 (50 cm³) engine series, as well as Minarelli's 125cc units.
• Chassis/frame: Cimatti did not manufacture its own frames on a large scale, but sourced them from Verlicchi, the leading Italian specialist in motorcycle frames. The frames were mostly double-loop constructions made of chrome-molybdenum steel.
• Suspension: Components from Marzocchi (forks) and Corte & Cosso or Sebac (shock absorbers) were used.
• Other attachments: Plastic parts often came from Acerbis, brake systems from Grimeca.
